Ingredients
· 2 cups old-fashioned oatmeal
· 1 cup sliced almonds
· 1 cup walnuts
· 1 cup shredded coconut
· ½ cup wheat germ
· ½ cup dried cranberries
· 1 cup dried –mixed fruit of choice (I used Trader Joes Mixed dried berries which had dried blueberries, cherries, strawberries, etc..)
(you can thrown in dried apricots, dates, or any other nuts or berries you like)
· Binding agent:
· 3 tablespoons unsalted butter
· 2/3 cup honey
· ¼ cup (light) brown sugar. (I used dark brown, because it was all I had in my cupboard)
· 1 ½ teaspoons pure vanilla extract
· ¼ teaspoon salt
Directions
Lightly toast the oats, almonds, walnuts and coconut on a flat baking sheet at 350 for about 10 minutes. Careful because the coconut will burn a lot quicker than the nuts and oats. (toast separately if needed). Stir occasionally until lightly brown.
Put toasted mixture into a bowl along with wheat germ.
In a sauce pan, put butter, honey, brown sugar, vanilla and salt, and bring to a boil over medium heat, cook and stir for a minute.
Pour over toasted oatmeal mixture. Add the berries, and mix well.
Pour the mixture into a baking dish. (line with parchment paper)
Press mixture evenly into pan, and bake for 25-30 minutes or until light golden brown. Put in fridge for 2-3 hours to harden, before cutting into squares.
