Simple Turkey Roll-up

Pack this lunch in no time. Serve with carrot sticks and a piece of fruit for a well rounded meal.

Serves 2
Prep Time: 5 minutes

Ingredients:

2 whole wheat flour tortillas
2 Tablespoons light mayonnaise OR mustard, divided
4 slices deli turkey, divided
4 slices light swiss cheese, divided
4 romaine or leafy green lettuce leaves

Instructions:

1. Place each tortilla on a plate. Spread each tortilla with 1 Tablespoon mayonnaise or mustard.

2. Place two turkey slices on half of the tortilla. Layer two slices of cheese on top of the turkey. Repeat with second tortilla.

3. Gently press down on the lettuce leaves to flatten. Place lettuce on top of cheese slices.

4. Start rolling the tortilla from the side with the layered turkey, cheese and lettuce. Roll tightly into a tube shape.

5. Secure each roll-up with four toothpicks. Cut each roll-up into four pieces. Enjoy immediately. Or, wrap tightly with saran wrap or foil to hold it together for later.

Options: You can substitute 2 Tablespoons light herb cream cheese or 1/2 avocado mashed plus 1 teaspoon lemon/lime juice for the mayo/mustard and light swiss for other tasty treats.
