Giant White Beans with Vegetables

Need dinner on the table fast? This easy and flexible recipe will help you sprint to the finish. Start with a jar of “Giant White Beans” in Tomato Sauce from Trader Joe’s. You will find them near the canned beans and soups. Add some chopped vegetables: onions, zucchini and/or bell peppers work nicely. Use whatever you have on hand. Serve with a side salad or vegetables and whole grain bread or brown rice to complete the meal. Feeding a family? Double the recipe and save leftovers for a healthy lunch.

Serves 3

Ingredients:
2 teaspoons canola or olive oil
1 cup chopped red, yellow or white onion
1 zucchini, chopped
1 red, yellow or green bell pepper chopped (optional)
1 (12 ounce) jar Giant White Beans in Tomato Sauce (a Trader Joe’s product)
Chopped parsley (optional)

Preparation:
1.     Heat a large skillet or non-stick pan over medium high heat. Add 2 teaspoons oil and vegetables. Cook about 5 minutes or until vegetables start to brown and soften.
2.     Reduce heat to medium low. Add Giant White Beans and every drop of sauce from the jar. Stir occasionally while beans warm up.
3.     Divide between 3 plates or bowls and top with a pinch of chopped parsley (if you desire). Enjoy!
